Good Eats: Baked Banana Blueberry Oatmeal

My family and I are big on breakfast, but since I have a hard working husband who is always in a rush during work week mornings, and a toddler son who can be a little picky, it can be hard to please everyone with one dish. Thank god for this baked oatmeal recipe! It’s a surefire way to get the whole family smiling and keep their bellies full all the way until lunch. It also happens to be beyond delicious, incredibly healthy, and easy to make too. And best of all, you can make a big batch and then reheat it throughout the week.

Here’s what you’ll need:

  • a large baking dish
  • 2 ripe bananas
  • 2 cups blueberries
  • 1 cup uncooked oatmeal
  • 1/2 cup raw, sliced almonds (or other nut of your choice)
  • 3/4 tsp cinnamon
  • 1/2 tsp baking powder
  • a pinch of salt
  • 1 cup unsweetened vanilla almond milk (or other milk of your choice)
  • 1 egg
  • 1 tsp vanilla extract

 

Directions:

  • Preheat your oven to 375 degrees.
  • Lightly spray your baking dish with cooking oil.
  • Slice bananas and line bottom of the dish. Then top with 1/2 of your blueberries and 1/4 of the cinnamon.
  • Cover with tinfoil and bake for 15 minutes.

While that’s baking, combine the oats, half of your nuts, baking powder, the rest of the cinnamon and salt in a bowl. In another bowl, mix together your milk, egg and vanilla.

When the 15 minutes is up, remove your dish from the oven and pour your dry ingredients on top of your baked berries, bananas and cinnamon. Next, pour the wet mix on top of that.

Bake at 375 degrees for 30 minutes, and ENJOY!

My feminine bow tutorial was inspired by the colors of spring and the fashionable outfits on Lulus.com! One of my favorite dresses is the Because You Bow Better Ivory Dress. The open back is transformed from dangerously sexy to ultra-cute with a simple bow accent.

I used some soft pastels for my nails’ bows, but you can make this mani sexy with red, or sultry with navy. Experiment with different color combinations to find the right fit for you!

This up and coming country rock band from Phoenix, AZ plays a wide range of newer and older country and rock music as well as original music. Tommy Ash has shared the stage with country music legends such as John Conlee and Tracy Lawrence, and has played for numerous venues and rodeos valley-wide.

The band rocked the stage when they opened for the famous pioneer of country music, Dwight Yoakam at the Fox Tucson Theatre in Arizona. She performing her original song “Sinners Blood” (From her upcoming album to be released in 2013) and looked lovely in our Wishy Posh-y Strapless Black Dress and our Heads or Tails Gold Arrow Bracelet.
