Fall is the perfect time to indulge in all things sweet, spiced, and pumpkin flavored. But who’s to say you can’t find a healthy and wholesome way to have pie for breakfast too!? These overnight oats are so simple and make you feel like the holidays are hugging your face. Trust me.

Ingredients:

3/4 cup canned organic pumpkin

1/2 cup rolled oats

1/2 cup full-fat honey Greek yogurt

1 scoop vanilla protein powder (Optional, but it adds a little sweetness, protein, and thickens up your oats quite a bit. Skip it if you’re not into protein powder, it will still be super yummy.)

1 tbsp hemp hearts

1 tbsp chia seeds

2 tsp pumpkin pie spice

1/4 tsp pink Himalayan sea salt

1/4 cup chopped walnuts for topping

Cinnamon for topping

Mix your pumpkin with the protein powder, hemp hearts, chia seeds, pumpkin pie spice, and sea salt. Stir in your Greek yogurt next to make it all nice and creamy, and then add in your oats and cover overnight in the fridge or at least for an hour or two- side note, this makes an amazing lunch/midday snack if you want to make it in the a.m. and eat it later in the day! When you’re ready, remove from the fridge, give it all a big stir, top with walnuts, another scoop of yogurt and a sprinkle of cinnamon and dive into a bowl of cozy sweaters, fall leaves, and spiced goodness. The best part about this recipe is that it’s super flexible, so if you want a creamier consistency, add more Greek yogurt. For a vegan version, sub the yogurt with almond milk or your fav coconut yogurt. It’s like a pumpkin spice latte meets pumpkin pie minus the caffeine high and sugar hangover. Hope you love it!
