It’s no secret that I used to be a baker. A forever passion of mine, I am reminded of those early mornings with the giant mixers and flirting with the intense heat of industrial ovens. Those days are gone, and for me, the love of whipping up extra large batches of cookies, breads and goodies has only been replaced by the joy of cooking at home!

For all of you lovely home bakers out there, I am ready to divulge one of my all-time favorite cookie recipes. Tried and true, this recipe makes delicious Peanut Butter Chocolate Chip Cookies small or jumbo!
1C. Peanut Butter (smooth or crunchy, you pick!)
1 C. Butter (softened)
3/4 C. Granulated Sugar
3/4 C. Brown Sugar
2 Eggs
2 C. Flour
1 tsp. Baking Soda
2 C. Chocolate Chip
Directions: Preheat oven to 350*. Mix together flour and baking soda. In a separate bowl, mix together peanut butter and softened butter, then beat in all the sugar. Add eggs and mix. Add flour mixture and beat until fairly smooth, then add chocolate chips.
Bake cookies on an ungreased cookie sheet until lightly brown on the bottom. Approx. 8-12 mins.
*For Jumbo Cookies: Measure out dough with a 1/2 C. measure, flatten gently on cookie sheet. Bake approx. 15 mins.
**Bonus Tip: Roll out the dough into individual cookie balls and freeze on a cookie sheet. When dough is frozen, store in a sealed bag or container in your freezer.
To bake, simply pull out how many cookies you want and defrost on a cookie sheet for 20 minutes. Bake as normal and enjoy fresh cookies whenever you please!
